They also have 60 mg calcium, 586 mg of potassium, 30,000 IUs of vitamin A 15,000 units of beta-cartoene, 6,000 alpha-carotene and a small amount of magnesium, phosphorus and vitamin C. This food would be good to eat with healthy fats like wild samon, grass fed beef, or avacado because when carrots are eaten with fat the carotenoids and vitamin A are better absorbed because they are fat soluble nutrients.
